1 In a food processor, combine the dates, Brazil nuts, oats, lemon juice, 1 Tbsp of the lemon zest, the coconut nectar, and the lemon extract and process for 1 to 2 minutes, until a sticky mass forms.
2 Spread the remaining 1 Tbsp lemon zest on a plate. Using a tablespoon, scoop the mixture and, with clean slightly wet hands, shape the mixture into a ball between your palms. The mixture will feel “wet” to the touch. Wrap the ball in a piece of paper towel or cheesecloth and squeeze to extract excess moisture and bind the ingredients so that the ball maintains its shape.
3 Roll the ball in the lemon zest to lightly coat, and set on a plate. Sprinkle the top of the ball with a pinch of ground cinnamon. Repeat with the remaining mixture until you have 15 balls, each just smaller than a golf ball.
4 Place the balls in the freezer to set for 30 minutes. Store in an airtight container in the refrigerator or at room temperature until required.

Orange and Brazil Nut
Exchange the lemon for another fruit bursting with vitamin C—an orange. Omit the lemon juice, zest, and extract and add 1 Tbsp fresh orange juice, plus 1 Tbsp finely grated zest and 1 /8 tsp pure orange extract. Roll the balls in 1 Tbsp finely grated orange zest.
Lemon, Rosemary, and Brazil Nut
If you love a sweet-and-savory flavor combination, add 1 /2 tsp dried rosemary to the mixture before processing.
